Vegetarian Soya Mince Lasagne

I have definitely found my new favourite thing when it comes to making vegetarian food, unflavoured soya mince! The recipe is full of flavour, with a delicious, simple white sauce and topped with plenty of cheese. This recipe is divided into three aspects, the soya mince, the white sauce, and the lasagne.

The Soya Mince

I really like the fact that you can flavour and make unflavoured soya mince anyway you want and it also absorbs less water than flavoured mince. It is still a new thing for me but I am learning a lot and it is actually so simple to make.



To start simply add a cup of boiling water to a cup of soya mince and let it stand until it is time to add it to the pot. Chop an onion, I do not make mine too fine but it really up to you how fine you want the onion to be. 









Heat oil in a medium sized pot and then add the onion, add some salt, pepper, and herbs of your choice (my go to herbs are garlic and herb or Italian herbs). Once the onion has started to brown, add the garlic and fry it slightly. 


Add the soya mince to the onion and garlic, add salt, pepper and herbs. Cook until all the water is out and now it is time to make a delicious sauce! Add a tin of tomato and onion mix, some Worcestershire or Soya sauce, tomato sauce, and chutney. That is all you need to make an amazing sauce! Mix everything in well and let it simmer for about 5 minutes, taste and adjust as needed.



The White Sauce

Now that your soya mince is ready it is time to make your white sauce! Melt butter or margarine in a saucepan, next slowly add the flour and whisk until all the flour has been mixed with the butter. It should be all crumbly.  


Time for a good arm workout! Add milk a little at a time and whisk furiously to make sure no lumps are formed. Keep adding milk until your sauce is quite thin, as you don’t want it to be too thick for lasagne. Finally add ENOUGH Aromat to make the sauce flavourful.


 



The Lasagne 


Now for the final phase, putting everything together to make this amazing vegetarian, soya mince lasagne. Start with a layer of mince, followed by lasagne sheets, mince, white sauce, lasagne sheets, repeat. For the final layer put white sauce on top of a lasagne layer and finally add your cheese! 



Bake at 180℃ for 30 minutes and then grill it for about 5 minutes to get the cheese nice and crispy! Let it cool down before serving, serves 2 - 4. 



Ingredients


Soya Mince

  • 1 Cup Unflavoured Soya Mince (Mixed with 1 Cup boiling water)

  • 1 Chopped Onion

  • 1 tsp Crushed Garlic

  • 1 Tin Tomato & Onion Mix

  • 2 Tbsp Oil

  • 3 Tbsp Worcestershire Sauce

  • 3 Tbsp Tomato Sauce

  • 2 Tbsp Chutney

  • Salt 

  • Pepper

  • Choice Herbs


White Sauce


  • 60 gr Butter/Margarine 

  • ¼ Cup Flour

  • 400 ml Milk

  • Aromat 


How to Make Vegetarian Soya Mince Lasagne


Soya Mince


  • Mix soya mince with boiling water

  • In a medium pot heat oil over high heat

  • Fry the chopped onion until it starts browning then add the garlic

  • Add the soya mince and salt, pepper, and herbs to taste

  • Mix in the tin of tomato & onion mix as well as the Worcestershire sauce, tomato sauce, and chutney.

  • Simmer on low heat for about 5 minutes, stirring occasionally.


 White Sauce


  • Melt the butter in a saucepan over high heat

  • Slowly add the flour and whisk it in with the butter

  • Add a small amount of milk at a time and whisk continuously to avoid lumps

  • Add Aromat to taste


Lasagne Building


  • Preheat oven to 180℃

  • Spread a thin layer of soya mince at the bottom of your dish


  • Place a layer of lasagne sheets

  • Spread a layer of soya mince followed by a layer of white sauce and then a layer of lasagne

  • Repeat until you have two to three layers

  • The last layer should consist of lasagne sheets with white sauce on top, without soya mince

  • Spread about 1 cup of grated cheese on top

  • Bake for 30 minutes and then grill for about 5 minutes

  • Allow to cool down before serving and enjoy!
