No Bake Cheesecake

 I absolutely love a no bake cheesecake because it makes a great dessert that is not overly sweet! I was trying create the perfect basic cheesecake recipe that will work with any topping of your choice and I must admit this is a delicious recipe and super simple with only 6 ingredients!


The first stage of making a cheesecake is to get your base ready and for that all you need is some coconut or ginger biscuits and melted butter.

Empty the packet of biscuits into a freezer bag, and get ready to release any frustrations you might have as you crush the biscuits into small chunks. This has got to be one of my favourite parts of making this yummy biscuit base.







Melt your butter and add the crushed biscuits making sure they are all covered in that buttery goodness and it is sticking together.



Press into your cake tin or pie dish making sure the biscuit base is evenly spread. Place in the fridge until the cheesecake filling is ready.





Now that we have used 2 of our 6 ingredients it is time to get started on the cheesecake filling with our last 4 ingredients! It is really so quick and easy to put together!


Pour the cream into a large mixing bowl and whisk until it starts to get stiff. Do not over whip your cream, we are not trying to make butter today so take it slow.





Once your cream has become stiff add the cream cheese, castor sugar and lemon juice. I used homemade cream cheese which is more acidic than that bought in store so I did not need to add lemon juice. The lemon juice really does help to add a little acidity and extra flavour.
Mix the cream, cream cheese, sugar and lemon juice until well mixed and smooth.



Your biscuit base should have had time to set while you were getting the filling ready. Place the cheese cake mixture over the biscuit base and spread evenly. Let it set in the fridge overnight. 



Depending on which topping you want to add you will add your topping before you set it overnight or you may want to do it the next day. I usually use strawberry jam and then I swirl it into the cheesecake while it is still soft. When I made the blueberry topping however I did it the next morning and quickly added it.



Ingredients

Biscuit Base

  • 1 Packet Coconut or Ginger Biscuits
  • 100gr Melted Butter or Margarine

Cheesecake Filling

  • 250ml Cream
  • 200gr Cream Cheese
  • ⅓ Cup Castor Sugar
  • 2 Tbs Lemon Juice

How To Make No Bake Cheesecake

Biscuit Base

  • Place biscuits in a freezer bag and crush into small chunks
  • Melt butter in a mixing bowl and add the biscuits
  • Mix thoroughly
  • Press evenly into cake tin or pie dish
  • Place in the fridge

Cheesecake Filling

  • Whip the cream in a large bowl until it starts to become stiff
  • Add the cream cheese, castor sugar and lemon juice
  • Mix well and until mixture is smooth
  • Scoop over the biscuit base and spread evenly
  • Place in the fridge overnight to set
  • Add topping of your choice and enjoy!
