Chocolate Cake with Coffee Icing

 Chocolate cake time! I absolutely love this recipe and am so excited to share it, it is easy and super delicious! I love that this cake is not overly sweet and the coffee icing in my opinion is the perfect pairing.

In fact this cake is so good, I even forget to snap a picture of a yummy slice, I just couldn't wait to eat it!


First thing is to get all your ingredients, no one wants to be running around looking for ingredients once they get started which is why I always pack everything out before getting started!



 You will need eggs, butter, flour, salt, vanilla essence, sugar, milk, baking powder and cocoa. 




First beat the eggs until they are light and fluffy, while slowly adding the sugar. 


Pour the milk into a sauce pan, add the butter and heat on low heat to melt the butter and slowly bring it to the boil, once it starts boiling remove from the heat. 





In a separate bowl combine the flour, salt, baking powder and cocoa. Then add to your eggs and gently fold it in. It is important that you fold and not just stir the mixture, as folding allows for air to enter your batter which makes the cake light. Add the vanilla essence. 





Finally, slowly add the warm milk mixture and mix thoroughly, making sure all the milk has combined with the batter. 




Divide the batter into two round cake tins, place in your preheated oven and bake! It will bake for 25 to 30 minutes. 





To make sure it is ready, poke a knife or toothpick into the middle, if it comes out clean the cake is ready to come out! Place on cooling racks to cool before making the icing and icing your beautiful chocolate cake!


While your cakes are cooling, get the icing ready. For coffee icing you need icing sugar, butter, instant coffee dissolved with a little bit of boiling water, vanilla, and milk. Beat the butter until it is soft, then add your icing sugar slowly and mix well. 


Once it has been mixed add the coffee and vanilla. If needed you can add a splash of milk to your icing if it seems a bit thick. 





Mix until the coffee is mixed through out and it is a creamy coffee colour!




Now for the finishing touches to your cake! Spread a layer of icing on one layer of cake and then carefully place the second layer on top. To cover the cake I find it easy to place big dollops of icing around the cake and the spread it out with a knife or spatula until it is at least somewhat even all around the cake. Icing is definitely not my strong point, so no need to worry about your icing being smooth and perfect. 


Add a topping of your choice if you want. My favourite topping is cherries or some chocolate sprinkles!!


Ingredients

Chocolate Cake

  • 4 Eggs
  • 2 Tbs Butter/Margarine
  • 2 Cup Flour
  • ¼ tsp Salt
  • 1 tsp Vanilla Essence
  • 1 ½ Cup Sugar
  • 1 Cup Milk
  • 2 tsp Baking Powder
  • 2 Tbs Cocoa Powder

Coffee Icing 

  • ⅔ Cup Icing Sugar
  • 125gr Butter/Margarine
  • 1 tsp (heaped) Instant Coffee (dissolved in a little bit of boiling water)
  • 1 tsp Vanilla Essence
  • 1 tsp Milk (if needed) 


How To Make Chocolate Cake With Coffee Icing

  1. Beat eggs very well and slowly add sugar. Beat until light.
  2. Melt butter in milk on a low heat. Once the milk starts to boil, remove from heat.
  3. Mix flour, baking powder, salt and cocoa powder.
  4. Add to egg and sugar mixture. Fold in!
  5. Add vanilla essence.
  6. Add warm butter mixture and mix well.
  7. Pour equally into two cake tins.
  8. Bake at 180℃ for 25 to 30 minutes.
  9. Allow cake to cool down on cooling racks.
  10. For the icing, beat the butter until soft and slowly add icing sugar.
  11. Add instant coffee and vanilla essence. Mix well.
  12. Spread a generous layer of icing on one layer of cake then place second cake on top.
  13. Spread icing over the whole cake, try get it as even as possible.
  14. Add toppings of your choice.
  15. Cut yourself a slice and enjoy!
