Tomato Onion Mix

 This is a goes with anything kind of recipe. Once you have made it, you can freeze it and have it ready for whenever you need! Usually I add this to my mince when I made spaghetti and mince, it is the perfect mince sauce, but you can also use with pap, pizza, or even on your boerewors rolls. It has simple ingredients, is simple to make and can be adjusted based on your taste!


The three main ingredients for your sauce is tomatoes, onions, and garlic. This recipe is great if you have overripe tomatoes that are not great for salad anymore and you don't want to just throw them away either. The first step is to chop, chop, chop!


 



Roughly cut the tomatoes into blocks, none of the cutting needs to be perfect so just go for it!




Cut the onions in quarters and the slice the onions about medium thickness. If you prefer small onion pieces slice it thinner or chop it smaller.




If you are using fresh garlic, roughly mice the garlic until it is quite finely chopped.



Now that your tomatoes, onions, and garlic is chopped and ready to go, it is time to move on to making your sauce!

Melt some butter and coconut oil in a large pan or medium pot. Once it has melted, add your onions and immediately add curry powder, salt, pepper and other herbs and spices. 








Once the onions have started to brown, add the garlic. Sauté the garlic and onions until the onions have become soft and translucent. 

Next add your tomatoes. Cook until the tomatoes are soft, stirring occasionally. I love the sweetness that you get from cooking tomatoes, it is such a versatile ingredient to cook with because you can really adjust the flavour to what you want, more sweet or more salty! 







Once the tomatoes are completely cooked, reduce the heat to a simmer. Start adding sauces and more seasoning to really flavour the mix. Add tomato sauce, chutney, and woster sauce or soya sauce. Add salt, pepper, and herbs. All to taste.

Allow the mixture to cool slightly before bottling it or placing it in freezer bags to be frozen. If you freeze it, simply take it out when you want to use it, defrost it a little and add to your meal!



Ingredients

  • 10 Tomatoes
  • 3 Large Onions
  • 3 Cloves of Garlic or 2-3 tsp Crushed Garlic
  • 2 Tbs Butter
  • 2 Tbs Coconut Oil
  • 1 tsp Curry Powder
  • 2 tsp Salt
  • 2 tsp Pepper
  • 2 tsp Mixed Herbs
  • 5 Tbs Tomato Sauce
  • 3 Tbs Soya Sauce
  • 3 Tbs Chutney

How To Make Tomato Onion Mix

  1. Chop the tomatoes roughly into cubes. Cut the onion in half and slice. Finely mince the garlic cloves.
  2. Melt butter and coconut oil in a large pan or medium pot.
  3. Add the onions once the butter and oil has melted.
  4. Add the curry powder, and half of the salt, pepper and mixed herbs.
  5. When the onions start to brown, add the garlic and sauté until the onions are soft.
  6. Add the tomatoes and cook until soft, stir occasionally.
  7. Reduce the heat to allow the mix to simmer.
  8. Add the tomato sauce, soya sauce, chutney and the rest of the salt, pepper and herbs.
  9. Add any of the sauces and seasonings to taste.
  10. Simmer for about 5 minutes.
  11. Allow to cool before placing in bottles or freezer bags.
